St. Lucy (Santa Lucia) was a Sicilian martyr (d. 304). Her name means "Light" (Lux).
The Eyes
Legend says a pagan suitor loved her beautiful eyes. To keep her vow of virginity, she plucked them out and sent them to him on a platter. Miraculously, God restored her sight (making her even more beautiful). This is why she is the patron of the blind and eye doctors.
The Swedish Tradition
In Scandinavia, the eldest daughter wakes up early on Dec 13 playing "St. Lucy." She wears a white dress (purity), a red sash (martyrdom), and a crown of candles on her head. She serves coffee and saffron buns (lussekatter) to the family. It symbolizes the Light of Christ coming into the darkness of winter.
Fun Fact
Before the Gregorian calendar reform, Dec 13 was the Winter Solstice (the darkest day). "Lucy" literally brings back the light.
