There are only two mandatory days of fasting in the whole year: Ash Wednesday and Good Friday.
The Rules (Canon 1251-1252)

Abstinence (No Meat):
- Who: Everyone age 14+.
- When: Ash Wednesday, Good Friday, and ALL Fridays in Lent.
- Note: Fish, eggs, and dairy are fine. Chicken stock is debated (but usually okay).

Fasting (Less Food):
- Who: Adults age 18 to 59.
- What: One full meal. Two smaller meals that together don't equal a full meal. No snacking between meals.
- Liquids: Water, coffee, tea, juice are allowed at any time. (Liquid does not break the fast).

Exemptions:
- Pregnant/Nursing women.
- Sick/Diabetic.
- Manual laborers.
